Infinite Roots receives 2.6 million euros in funding

Infinite Roots transforms whey waste into valuable resources. The Hamburg-based biotech company aims to use whey as a substrate for mycelium production and create new, environmentally friendly products.
Hamburg, October 17, 2024 - Infinite Roots, a biotech startup dedicated to sustainability in the food industry, has received funding of 2.6 million euros in collaboration with the Hamburg University of Technology (TUHH). The funds will be used to develop a project for the utilization of whey, the largest by-product of milk production. The aim is to develop a technology that uses whey as a substrate for mycelium fermentation in order to create new types of alternative dairy products.
Support from the Federal Ministry of Food and Agriculture (BMEL)
The project is supported by funding from the BMEL. The decision was made on the basis of a decision by the German Bundestag via the Federal Office for Agriculture and Food (BLE) as part of the innovation funding program.
Around 180-190 million tons of whey are produced worldwide every year, only about half of which is processed. Whey, which makes up 80-90% of the milk used in cheese production, poses a significant environmental problem. Its disposal is expensive and can lead to harmful environmental impacts such as groundwater pollution. The Infinite Roots project aims to solve this problem by turning whey into a valuable raw material.
Mycelium: a solution for sustainable food production?
The project focuses on the use of whey as a source of nutrients for mycelium fermentation. Mycelium, the root structure of edible fungi, is a promising raw material for the production of sustainable and healthy food. By fermenting whey, new, environmentally friendly ingredients and products could be developed that have the potential to revolutionize the food industry.

The newly developed technology could fundamentally change the utilization of whey waste and open up new revenue streams for the dairy industry. Infinite Roots, formerly known as Mushlabs, has established itself as a pioneer in the field of sustainable food technologies in recent years. We last reported on the company in January 2024, when it raised a successful Series B financing round in the amount of 58 million US dollars closed.
